If you are using PVA, then a spray tack isnt going to be much of a problem as long as you dont use too much of it. The key is to be very light-handed with it, dont even spray it AT your mould surface, spray it above your mold surface so that the mist settles down onto your mould. 

As long as you use it sparingly, then it should clean off quite easily and wont be noticeable after you have sanded and cleared your part.

What grit depends on the coating you are spraying, it should tell you on your products TDS. Most 2k high solids clear coats will want you to sand with 600-800. Don't go too light on the sanding, you still want to prep the panel properly.
