Polo Kayak - Using release film on large areas

I have a polo boat and the resin on the underside has flaked quite a bit.    I've watched the composite kayak repair video and have a decent understanding of how to do patch repairs.  But in this instance it looks like so much of the resin is flaking off that I need to sand off a lot (most) of the resin on the underside of the boat, so I'm wondering three things....

1. Which resin should I use (I've used the rapid repair/quick setting one before but looks like a slower hardening would be easier to work with when doing large areas ?)

2. Can I use release film on such large areas ? Or how best to get a smooth finish ? 

3. Is one coat sufficient ?

I work on the evening / after work schedule so I sand and coat each evening.  This gives it 24h to cure before you sand again.  Not a massive effort and it's surprising how quickly it builds up.
