Polo Kayak - Using release film on large areas

I have a polo boat and the resin on the underside has flaked quite a bit.    I've watched the composite kayak repair video and have a decent understanding of how to do patch repairs.  But in this instance it looks like so much of the resin is flaking off that I need to sand off a lot (most) of the resin on the underside of the boat, so I'm wondering three things....

1. Which resin should I use (I've used the rapid repair/quick setting one before but looks like a slower hardening would be easier to work with when doing large areas ?)

2. Can I use release film on such large areas ? Or how best to get a smooth finish ? 

3. Is one coat sufficient ?

I've repaired a few boats like this.  I've tried alsorts to get a nice finish!  Using film over a large area is hard to stop wrinkles etc getting in.  The stretchy film might be better (wasn't available when I was repairing boats).  IMO the best option would be the coating resin but I did mine by sanding off the affected area, paint on a thin coat of resin (something like EL2), sand, coat, sand, coat....etc until you've got a good layer built up then coat and sand smooth followed by a final polish up.  This will make it as new.  You can do the build up part just in the gouges / cracks to save resin / effort until you have a level surface.  TBH though, your boat doesn't look too bad, I've seen alot worse!
