In terms of wheels, almost anything is possible with enough forthought but its likely to be very very difficult. Nothing to say you cant in theory infuse a rim shape. However youve got to get the fabric to stay where it is, and ideally you don't want excessive spray tack usage in structural parts. Then the nature of infusion means it may not be perfectly even all the way round making balancing an issue.
Pre-pregs would be much more consistant and infinitely easier to lay up.
All the formula student ones I've seen used pre-pregs. Some used multiple parts bonded together, others devised a more complicated one piece approach. Some went for carbon rims and billet machined alloy centres.
