I would at least go with two layers on each side if for nothing other than cosmetic reasons. (you could get away with one layer if the underside appearance doesn't matter. If you only use one layer of carbon fiber, you can often see the colour of the underlying material (in this case, the white soric) and it will ruin the look of the hood. Only if you lay the fabric absolutely perfectly will you not get any gaps between the fibers.
As far as for structural purposes, I don't know what is recommended, but the soric does a great job of increasing its stiffness.
Hopefully some of the members who have made hoods can give some advice for thickness.
