I'm making a hard top roof for my car and the inner part is quite a complex shape with lots of complex curves and sharp returns. In this case pro-finish is not my friend as its just not mobile enough. I'd appreciate some pointers on how you guys deal with these sort of problems.
This is a pic of the plug, the white is the mould for the outer part, the blue is the plug for the inner piece that I'm moulding.

Come on, it is not that complex
or maybe I just can't see it on the picture, I think that standard 2/2 twill 200gsm will do the job, use twill because it is more flexible than plain weave
If you do resin inf you can use spray tack to place carbon in place, if you do wet lay up, wait until resin/gelcoat will get tacky and then place fabric. If you REALY have problem to fit the fabric try using this as a first layer

Love the banter! The sharp returns are the squares in the middle have a 1/2 in 90 degree return and then there's the pointy bits on the corners. I think my issue is that I'm trying to keep a perfect weave pattern and have the cloth aligned with the centre appertures. This just pulls it in disturbing the weave. Perhaps 2x2 twill would be better than profinish just for the better drape.

If you are careful, use adequate spray tack n regular 2x2 twill, you should easily be able to get a perfect weave on that roof. Take your time n get help from a friend, or construct some draping jig n start from the center.
