Hey guyz,
can I use
High Density Polyurethane Foam Block
or
extruded
polystyrene
to create a mould, then finish it for a clean and smooth surface, and then
infuse
my carbon parts on it? Or should I only use it for creating the pattern of my carbon part?

In the video you can see they use PU-foam (pink) as mould for their Prepreg-parts....
So I guess its plausible

Yep I do that quite a lot for "one offs" You will have to seal the foam with something like Epoxy Resin to give you a surface that you can polish. The reason I say for "one offs" is that the pattern usually gets destroyed when you demould.

The pink blocks are epoxy toolling block cnc milled.

No, The pink blocks are High density PU, use them all the time
strong as wood but no splinters and easy to sand the way you like it
