Skinning will add thickness, that's just the nature of the process. So you will lose the original fitment to a degree, though for most this is acceptable.
Just beware of skinning plastic components from car interiors. In the UK it may not be too bad, but here in Aus where we have 40+ degree days quite frequently in summer, the interior of the car gets very hot. Not only does this affect the surface finish of the resin, but it also causes the plastic to expand quite substantially, creating stress between the plastic and the carbon. When the interior cools down again, the plastic shrinks back down to size while the carbon doesn't change size at all, creating more stresses. Depending on the type of plastic used, the bond between the carbon and plastic will be very poor, and these expansion and contraction stresses more often than not cause the carbon to delaminate from the plastic and appear as bubbles in the carbon. There isn't much you can do to combat this, so just be aware it may happen and ruin your parts.
