I need to bond two parts of PTFE together and, due to the non-stick nature of the material, I was wondering which glue/adhesive to use.

Depends on the end application, what are you trying to achieve? Speak to Permabond. They make a range of adhesives for bonding PTFE, they will be able to recommend the most suitable product.

Basically, I have a 8mm sheet that I've been using to make myself some dibbers. But now I want to make one that is thicker but don't want to fork out for a thicker sheet.

why dont you drill a couple of holes in the sheets and pin them together with nylon/PTFE dowels?
