When to clamp the lines

I do this by trial and error and get ok results but it would be great to get some proper advice.  Ok I've seen the videos that the guys made with the resin reaching the catch pot before line clamping, but I find this gives quite a resin rich part.  What do others do?  I want parts which have the ideal resin/fabric ratio and I want to consistently produce the same part which is + or - 10% in weight as the preceeding part.  Would it not be better to clamp the resin feed line when you only have a little way to go in terms of the infuion, keep the vacuum going then clamp that line just as the infusion completes?

My stack is:

fabric
easy lease coated peel ply.
infusion mesh
bag

Or would it not be better to put a layer of breather fabric directly on top of the infusion mesh?

I'm fine with making parts, but this bit is something I'm never quite sure of the "right" answer.

If you are making structural parts, leave the pump on until cured, you will get a better ratio. The only reason the resin and vacuum lines are shut off after infusion is to avoid the dreaded pin holes in the parts surface. Most of the people on this forum are trying to get perfect cosmetic parts.

I would only bother going the first route for aviation structural parts and even still I don't think the strength would be that much more. Carbon is carbon.
