The techniques covered between the bonnet video and the video for making a split mould are everything you need to know.
A fender shouldn't need to be as thick as a bonnet, they tend to be geometrically much stiffer by design so can get away with being thinner. Provided there are no minimum thickness regulations stated by the road authority where you are, then you can probably get away with making carbon fenders the same thickness as your original fenders (which is generally around 1-1.5mm). Always a good idea to make the mounting areas a little sturdier, so 2-2.5mm at the fastening points. I'm not overly familiar with the 2012 Challengers, but I would hazard a guess that they aren't using the fenders as part of the crash structure, so there shouldn't be any tricks there - should be straight forward enough.
