if your keeping weight down and stiffness use, you may be better off considering a different core material.

Thats hard to say. Not having played with ply much myself I wouldnt be able to compare the two fairly but to me it sounds like you are expecting one layer of glass to replicate the equivilent of 10mm of ply, and that sounds a big ask!!.

Perhaps a couple of tests with offcuts are in order? keep adding layers of glass or increasing ply thickness until desired result is achieved.

Yes it is possible. People quite commonly coat wood with epoxy to seal and provide a hard wearing surface.  The resin you want is our

Epoxy Coating Resin which is a good hard wearing resin. You can just use some 290g Woven Glass Plain Weave to do any reinforcements on corners etc hand laminated on.

It is simple to do too.  Key the wood and ensure it is clean and dust free. Where you are adding glass, add a layer of resin and allow it to part cure tacky.  Then lay up the fibreglass on the tacky resin. It should stick in place.  Then coat over the whole wood surface with the resin.  Ensure when you overcoat the fibreglass that you wet it out fully and get out any bubbles. The glass will go from white to semi-transparent when wetted out. 

Let it cure. You can recoat any dry patches if you wish.
