Something on that scale I would probably stick with fairly traditional wet lay techniques with fibreglass. To keep the weight down, I would use a woven glass over CSM for the actual structure.
As the roof profile is pretty similar along its length, it would be easier to make the roof in multiple sections of the same/similar design. You could have and end section mould and a middle section mould and finally a "sloped" mould for the areas where it raises up. Include a recess for the solar panels and you will be fine. In terms of layup this very much will depend on the weight of the panels. Some can be quite heavy so you may want a combination of core materials and/or stiffening ribs laid up on the inside to help improve the overall strength and stiffness.
