Typically you can use up to 500g base coat per square meter and 1kg of coating resin per square meter. Different cloths will vary that amount, brighter colours will need more resin to hide than dark and the number of layers of resin needed to smooth the surface will vary that amount.
Realistically on typical scales a 100g batch size is the minimum size I would go for. If you have precision jewelers scales you can reduce this further but the smaller the batch, the more chance of error and other factors then start to play such as mixing accuracy, unmixed resin against corner of cup bottoms and sides etc can all add up to the level where the overall accuracy ends up out of sync enough to cause curing problems. It is not worth the risk of the resin failing to cure, when the cost of a small amount of excess resin being wasted is considered versus scrap carbon and potentially a ruined car trim part.
Large volumes of resin will exotherm so only mix a small batch of a size you can use in 10-15 minutes at most. When skinning you shouldn't need to leave the resin to stand for long periods to degas as much of the gas will come out when laid onto the part and the rest will come out with gentle use of a heat gun or hair dryer.
