I picked up the large vacuum pump a couple of weeks ago, received the wrong data sheet (for the smaller pump) so checked here and found the larger one takes 600ml of oil, however the oil level is still showing min even when filled with the correct amount, is something wrong here?

Just make sure that you haven't got an air pocket in there before you put more oil in. I did that with my vacuum pump, it just kept showing that it was minimum oil so I kept putting more and more in. Ended up putting a litre in, then when I picked the pump up to move it I obviously shifted the bubble and all of a sudden the oil level went surging up and I had to try to drain it out again. Just try tilting the pump a bit, then if it doesn't come up add some more oil.
