epoxy based composite mould

Dear Easycomposites Team,
I'd like to make an Epoxy based mould for low temp use (Resin Infusion Process with IN2 Epoxy Resin) the mould measurements are 1000 x 1000 mm and I have few questions about suitable surface gelcoat, epoxy resin and glass reinforcement. I know that the mould is "bigger" size and maybe the Uni Mould System is recommended but I used Uni Mould before and I have professional protective equipment (3M full face mask with 2 filter A2 etc.) and my workshop is very well ventilated with industrial blower but the Uni Mould's strong odour is stayed in the workshop a long time.  
FIRST VERSION:
the surface coat is 2 layer EG 60 Epoxy Tooling Gelcoat and the backing structure is 4 layer 300 g Powder Bound Chopped Strand Mat with EL 160 High Temp Epoxy Laminating resin.
Questions:
The EG 60 Epoxy Tooling Gelcoat is suitable as a surface layer or EG 160 High Temp Epoxy Tooling Gelcoat is better?
The EG 60 Epoxy Tooling Gelcoat is compatible with EL 160 High Temp Lam Resin?
The 4 layer 300 g Powder Bound Chopped Strand Mat is suitable and enough or more layer recommended (5 or 6 layer)?

SECOND VERSION:
the surface coat is 2 layer EG 60 Epoxy Tooling Gelcoat and the backing structure is 10 mm EMP 60 Epoxy Moulding Paste and 4 layer 300 g Powder Bound Chopped Strand Mat with EL 160 High Temp Epoxy Laminating resin.
Questions:
The EG 60 Epoxy Tooling Gelcoat is suitable as a surface layer or EG 160 High Temp Epoxy Tooling Gelcoat is better?
EG 160 High Temp Epoxy Tooling Gelcoat is compatible with EMP 60 Epoxy Moulding Paste?
When must laminating the 4 layer 300 g Powder Bound Chopped Strand Mat with EL 160 High Temp Epoxy Laminating resin over the EMP 60 Epoxy Mouldin Paste? Must wait until the EMP 60 is in tack free state but not fully cured?
