Depends on the quality of resin. A good quality infusion grade polyester resin should not look yellow. Same with epoxy.
There are also other advantages to epoxy, especially in terms of mechanical performance, that mean often epoxy is far more commonly used for infusion for DIY parts.
Not withstanding that, for mostly cosmetic parts, Polyester infusion resins often have the benefit of being UV stable which can be an advantage in hot and sunny climates as you would not then need to consider a UV stable lacquer that you might otherwise have to consider with an epoxy part.
