This highly depends on the shape of your specific seat.
But something about 240g carbon twill, 200g carbon biaxial, 2-3mm soric (sf or better lrc), 200g carbon biaxial, 240g carbon twill might be what you are looking for. Light, but usually strong  enough for tasks like that. Don't use sandwich materials at mounting points.
Based on your question I might guess, that you haven't got much experience in structual composites. Remember that a seat is a safety critical part.

To be on the safe side, I would recommend any design you make is at least simulated properly in a CAD package FEA tool to make sure you don't have any fundamental issues.  You could, of course, copy an existing design and base it on that, but even if you know the thickness. it is hard to know what the exact lay up and type of composite material has been used internally in the structure of the seat.

I would be especially cautious if you plan to sell the seats.
