Hello,
Is there any health risks from working with carbon fibre products such as matting ,eg cutting, sanding etc.?

Of course.
Any and all fibre reinforcement is bad to inhale, as is the resin dust. You want to be wearing an appropriate dust mask when doing any cutting or grinding. Even sweeping up your workspace when you are done, you should always protect yourself.
Personally I don't have an issue with my skin, but composite dust can be irritating to your skin so it's always a good idea to cover up. Big risk for your eyes as well, you don't want to get dust or fragments in your eyes, so always wear safety glasses when cutting.
Also lots of risks when working with the raw materials, uncured resins are hazardous to your skin and unhealthy to inhale the fumes, so always a good idea to wear nitrile gloves and a good organic vapour respirator.

You should always read the SDS that comes with any resin products and if you are unsure, ask for one for the fabrics too. With most cured resin composites, dust inhalation is the main hazard which needs to be dealt with. Sometimes people are also allergic to resins or fabric dust so that is something to watch out for.
