Making a sit on top ocean kayak

Aloha guys
I am planning on attempting to build myself a custom kayak out of carbon fiber and Kevlar.
I've been planning to do this for months, problem I'm having is where to start. I don't really want to shape a 16ft piece of foam.
Thought about buying a plastic kayak and cutting it in half and molding the inside with fiber glass, and making my modifications and changes to that and then using that as my plug for the final mold.
Other idea I have is glassing the Intire bottom side of my current kayak popping that off and then close off the majority of the inside with duct tape and card board, build up the sides a little and poor a bunch of poor foam into it and then just go at it until I have the top half the way I want it.
Seems witch ever aproch I decide to take will be very labor and time intensive, if any of you have any input or advice to help me make the smarter choice, I'd like to hear/read it!
