It depends on the other dimension of the hood. Our maximum width cloth is, as you correctly say, 1.5m roll width.  However we sell our cloth off the roll by the linear meter so if you needed a 1.6 by (up to) 1.5m wide single piece of fabric you could easily order 2 linear meters of a 1.5m wide cloth and have some spare.

If you still wish to go down the "V weave" route, either for cosmetic reasons or because your hood is too large, then great results can be had.  The first layer needs to be very carefully cut and laid perfectly centrally in the mould (or wherever you want your pattern "line" to be).  The first layer is critical as the edge of that fabric layer is the "join line" people will see on the finished part.  The second layer is rotated 90 degrees and then laid on top of and overlapping the first layer to give the "V weave" effect.

For the "V weave" effect, our ProFinish Carbon Fibre 2/2 Twill 3k 200g 1m Wide is a great reinforcement to use as the resin binder means a crisp and neat join line is much easier to achieve and the weave is much less likely to distort as the binder helps hold the fabric together.

We don't have a video guide ourselves for specifically V weave patterns. There may well be guides filmed by others available. A video would be of limited use as the process is based around your accuracy and neatness, which is something you cannot really learn from a video but from practice.

As an alternative, what we have seen a lot lately is people experimenting with other fabrics in the join area such as our Spread-Tow Carbon Fibre. This can be used as a "feature" strip down the middle and as a result is a bit easier to use. Once the strip is on straight, the fabric overlaps it so you never actually see the edge of the main fabric just the edge of the Spread-Tow Carbon.
