so whilst im reading through as many posts and topics as  i can, absorbing as much info as i can, i was wondering what someone would suggest as a good starting project? id like to make a mold from a set of toyota hilux wings that i have, but id rather start small than ruin a set of £600 wings.

nope, no experience in any of those things, but really need to start somewhere and need some guidence on where to start. 
only experience i have with composites is wet laying GRP. 

im considering making a 2 part mold from a epp flying wing by splitting it into top and bottom halve and then vacuum bagging.

for your first time choose simple mold or simply try to do for experience flat piece by infusion then piece like arm rest or smth with not a lot of curves. i do a lot wrap in carbon that is harder then infusion but if you have motivation and interest you gain your goals in this for sure.

If you've done wet lay then mould making shouldn't be a problem for you. As said choose a fairly simple shaped part for starters. Plastic trim parts/covers etc or even house hold items such as bowls, trays etc. Dont choose something too small as small parts can often be more tricky to lay up than larger parts. 
You can make it a split mould even if it's not needed as practice for more awkward parts further down the line.
