Is there such a thing as too big of a vacuum pump? I am looking at buying a 8cfm 2 stage pump. Thoughts? Bigger? I plan on building a hood or bonnet for you boys across the water. Thanks

Not really, CFM is just how quickly it moves the air. You need a pump that can pull 99% Vacuum, it doesn't matter how quickly it does it. So in most cases you will be paying for a big pump that you don't really need. And in fact if all you are doing is Vacuum bagging or infusion, then the smaller pumps can actually be better because you will have time to position the bag nicely etc.
The only time a big pump would really be useful is for degassing, as it can empty the chamber quicker. That can still be done using a smaller pump it might just take awhile. I use a 2cfm pump for all my work and it works fine.
