What's your recommendations to make regid sheets of carbon to use as a flat floor on a race car? Will be done using resin infusion.

How about 2-3 layers of carbon + suitable core + 2-3 layers of carbon?

If it will be going in a section that you will be standing on, then I would do 1 layer of carbon > 1 layer of aramid > 10mm foam core > 1 layer aramid > 1 layer carbon.

Then if you are going to be bolting the panels to the chassis somewhere, I would extend the carbon beyond the core to create a flange on all sides. Make this flange with either 10-12 layers of 200gsm carbon, or 2-3 layers of 650gsm carbon. Leave the aramid out of the flange to make it easier to drill holes etc.

It depends on how often it's attached to the chassis of the car. The fibreglass floors on our Ginettas are only about 3mm thick and withstand the diver climbing in and out with no problems, including the heavy mechanic stomping around inside it.

One thing to consider with vehicle floors is weight distribution. Is it an actual competition car? If so are you on the minimum weight? If your already having to add ballast, then leaving the floor as is or making a heavier floor is better.
