How many layers? Jet ski

I have whats called a Waterdawg Kustomz hull, it is a stand up jet ski. It is made of carbon fiber with a fiberglass core. I have a bit of a project going on right now. The rear of the sky has a "sealed" cavity filled with foam that got somewhat waterlogged. I cut open the ski, removed all the foam, sealed it and foamed it. Now I am reinstalling the tray but im unsure how many layers of carbon fiber to use. I ordered some 19.7oz 2x2 twill from US Composites. I cut out 2 pieces for the bottom and for the gunwhales I am thinking 2 pieces as well. How would you go about doing this? Here's some pictures so it's easy to understand. The last photo isnt laid down yet, it's just 2 layers I cut out.

Well yesterday I put the jet ski in my boiler room at 75F and got it all laid up. Today, a little over 24 hours, the resin still hasn't cured. I guess I screwed up somewhere huh? The resin I used has been in my garage since last year with the pumps installed on them. I primed the pumps into a waste cup and measured the resin/hardener ratio by pumps and then verifying on my shipping scale. I can see a problem with using my scale as it measures as low as .01 KG maybe this is not accurate enough? Either that or the resin went bad while sitting in my garage.

Do I be patient for another few days to see if it cures? Or should I just redo it? Now im a bit nervous if it does cure, the resin will be brittle? Next time im using a triple beam balance to measure the resin and fresh resin
