Having had a little read around here it seems that infusion is the method of choice. All of my projects have been a wet lay, perforated release film, breather fabric and vac bag style lay up. Its always been good for me so I'd be interested in hearing about the pros and cons of various methods. Pre-preg is a little out of my reach with no oven or autoclave I'm afraid!

wet lay requires an element of skill and practice to get a pinhole/bubble free finish.
resin infusion requires patience and a good method.
You spend the time getting your bagging stack right and use the right method for the infusion and you should get good results every time.
Also parts made resin infusion will usually be lighter due to the more precise resin/fabric ratio.
